Cooking Day 3: Beef and Chicken Fried Rice

Tonight's dinner was mostly Tony. He has been wanting to do fried rice for us for a while. Where Tony works, they do a Crab Fried Rice with a Bur Blanc sauce. Wes has had it a couple of times and LOVES it. Tonight's fried rice featured chicken and beef. Wes doesn't care for beef (I KNOW!) so his was all chicken.

We started this dish early. Tony made 10 cups of white rice and then we put it in the fridge to let it cool off. That stayed in there for a few hours and then he started marinating the chicken and the beef to make it flavorful. So in his marinade was sesame oil, salt, pepper, garlic powder, onion powder, minced ginger and the white parts of the green onions.

Once we were ready to start putting the meal together, Tony got to prepping. He sliced up the green onions and diced carrots and started putting things together. He got my Le Cruset pan hot and added olive oil and the onions and carrots. Once those were sauteed he added a beaten egg and cooked it through and added white rice. He cooked the rice for a few minutes then added soy sauce, salt and pepper, red pepper flakes, and the protein each of us wanted.

This dish was so delicious and so much better than restaurant fried rice. We wish we could have shared a big bowl of it with you all! Onward into the weekend...with COVID preparations, of course.

If you are following us, keep your eyes out, Tony wants to feature breakfast on one of these and I want to try croissants for the second time in 6 years. My friend Katie does THE BEST croissants, I just hope they get to be as good as hers.
