The Return, Tradition, and Family

I know, I know...  It's been a while. Tony went back to work in May (I think) I went back into the office full-time in June and then it was the regular school year. I was back to being busy and exhausted, so this took a back seat. I am hoping that I get to pick this back up on a semi-regular basis. We will see how it goes... Sunday Morning This morning, I started my morning with a cup of Blue Mountain Espresso and sat up in my bed to watch an episode of Netflix's Chef's Table BBQ. The Chef's Table series is one that makes me emotional, which I am sure it is meant to do. I knew this morning I would be making breakfast (well, brunch really) and I knew it would be my breakfast potatoes, so while I made my cup of coffee, I put a frozen package of bacon in cold water to defrost. This series, it tells the stories that I want Tony to have, the experiences, the exploration, the feeling of purpose when you find your passion. He loves food and he loves working in the food indust

Cooking Day 20: Fresh Pasta Lasagna

Sunday night dinner. I have been so lazy lately, but I knew I had to put together a Sunday night dinner. I gave the guys three options, Chicken Pot Pies and salad, Pot Roast, or Lasagna. I should have known better (singing Richard Marx's " Should've Known Better "). Lasagna is one of those dishes that I have been making for so long. I cannot remember the first time I made it. All I know is that as a kid, this was my favorite food and anytime my mom would make it, I was there helping her until it was me making lasagna anytime we had it. I cannot remember when it happened, but there was a time my mom made the frozen lasagna, you know...the one in the red box. I hated it...well, I hated the ricotta. It was from then on that I just knew that ricotta was the most disgusting thing ever. What it took me almost 40 years to realize is that I didn't hate ricotta, I just hated the gross, frozen, cheap ricotta in those frozen lasagnas. When I had my first cannolli I could n

Cooking Day 19: Early Dinner = Baking

Hello again. Yes, I know I've been gone for a couple of weeks. As I mentioned before, Tony is back at work and the last couple of weeks I've been exhausted and a little achy. I've been meaning to get back to cooking regular meals and blog them for you, but it is a little difficult when I have to cook and take my own pictures. That just means that I am moving through really quickly and not taking time to stop and take pictures, so for that I am sorry. Today, Wes let me sleep in and when I finally woke up, I panicked because I had placed a curbside grocery pick up order for 10am. I woke up at 10:30am! I jumped up and grabbed my phone to see if my order was ready only to find that there was no order...I forgot to hit the final submit button. Y'all...you have no idea how many times I do that. The electricity bill, my car payment...whatever. It is those stupid little, "Are you sure you want to submit the submit button you just submitted twice?" YES!!! JUST DO W

Cooking Day 18: Brinner

Image
Brinner. It is not something that I am usually excited about doing, but every time it is requested, it conjures fond memories of a show my young little family would watch together, Scrubs. Every time I hear brinner, I am brought back to... What is brinner? Well in case you still don't understand, brinner is breakfast for dinner. That's right. My family loves brinner...my family loves breakfast, but sometimes it takes a little bit for me to be ready to cook anything early in the morning. I don't normally mind breakfast, but it is usually egg-centered and I HATE eggs. Ugh Well this time, I complied. Tony was trying to get me to do both pancakes and waffles. Usually, when I make waffles, I make Liege Wafles. Have you had them? If not, you need to. I've made these a few times. I even served these at two brunches, one for my admin after she had her baby and then again for my youngest, Aidan's birthday. Everyone at both brunches was in heaven. The best thing is th
