Cooking Day 12: Crack Chicken

This is something I found when scrolling through Pinterest. I thought it was interesting, but it was a very long time before I decided to try it. When I did, boy oh boy did my boys go nuts for this dish. It is a pretty simple dish and if you look on Pinterest, there are many different ways to serve it. This dish is cooked in a slow cooker. We started ours at about 11:30 and it was ready to eat at about 5:30. We started by putting a slow cooker bag in the slow cooker. Do y'all know about these? They are my favorite thing, next to parchment paper. Though usually, they rip just a bit, there is much less cleaning of the slow cooker than if you let the food cook straight onto it. Into the slow cooker bag we put 5 frozen chicken breasts. I have found that using frozen chicken works best. Using frozen chicken adds a bit of liquid as it cooks to make the dish a little more saucy and not dry. To this frozen chicken I also add one block of cream cheese, salt, pepper and a packet of r...

Tonight, we all had a craving for pizza, so because we decided this so late, it was Dominos to the rescue! If you are using any kind of delivery service, please remember to tip your driver! Tony was having a sweets craving so we ended up in the kitchen anyway. We discussed many things, but didn't have this or didn't have that. What I DID have everything for was my lemon bars! So, if you have not had my lemon bars (and you like lemon desserts) then you are truly missing out. This is one recipe that I am really proud of because it really is that good. I started with a few different online recipes and tweaked them all until I came out with this one that I think is the best. I know it's the best, because the first time I made them this way, I had to make two pans work in one weekend because my mom, dad, Wes, and sons ate the first batch like it was the last food on earth. Cooking Day 10: Meat and Taters

Y'all, I cannot believe we are on Day 10! I really thought I would be done with this after Day 5! Well, tonight, Tony and I have some big news. We have not really told many people because we are kinda shy about this stuff. This afternoon, we were joined in the kitchen with a reporter from the Corpus Christi Caller-Times! I KNOW! We are gonna be Corpitos famous. Seriously though, this was not something we expected to come from it and so we are grateful and humbled by their interest. That is Tony being interviewed. Because tonight's dinner was pretty special, Tony and I racked our brains trying to come up with a menu that fit the evening. Cooking Day 9: Wes's Birthday & Lamb with Risotto

Join me in wishing my husband of 22 years a very happy birthday! He is only 30, can you believe it?! HA HA!! In his dreams. My newly 46-year-old husband usually gets anything he wants for his birthday dinner. As I mentioned once before, our lives get pretty crazy and I don't always get to cook big elaborate dinners. Tonight, it was a mother/son team effort with Tony doing most of the heavy lifting. Are ya'll working from home too? Cooking Day 8: Mexican Chocolate Cake

Well, we took another break yesterday and tonight from cooking dinner, but I still wanted to post something tonight. Since Tony has been out of work, he has been wanting more sweets, so we decided to do one of his favorite desserts, Mexican Chocolate Cake . This is another Pampered Chef recipe...did I mention how much I love Pampered Chef? This is the cake that Tony requests anytime he can, birthdays, Easter, Thanksgiving, Tuesday. As usual, I made some modifications to personalize it to fit our cravings for the day. This recipe is done in a bundt (in my head I'm saying boont...thanks to My Big Fat Greek Wedding) pan. Pampered Chef calls theirs a Stoneware Fluted Pan. We use a napkin to run the pan down with vegetable oil and make sure all the creases are covered. The last thing you want is a broken bbbboont.
