Cooking Through COVID-19

Sunday night dinner. I have been so lazy lately, but I knew I had to put together a Sunday night dinner. I gave the guys three options, Chicken Pot Pies and salad, Pot Roast, or Lasagna. I should have known better (singing Richard Marx's " Should've Known Better "). Lasagna is one of those dishes that I have been making for so long. I cannot remember the first time I made it. All I know is that as a kid, this was my favorite food and anytime my mom would make it, I was there helping her until it was me making lasagna anytime we had it. I cannot remember when it happened, but there was a time my mom made the frozen lasagna, you know...the one in the red box. I hated it...well, I hated the ricotta. It was from then on that I just knew that ricotta was the most disgusting thing ever. Hello again. Yes, I know I've been gone for a couple of weeks. As I mentioned before, Tony is back at work and the last couple of weeks I've been exhausted and a little achy. I've been meaning to get back to cooking regular meals and blog them for you, but it is a little difficult when I have to cook and take my own pictures. That just means that I am moving through really quickly and not taking time to stop and take pictures, so for that I am sorry. Today, Wes let me sleep in and when I finally woke up, I panicked because I had placed a curbside grocery pick up order for 10am. I woke up at 10:30am! I jumped up and grabbed my phone to see if my order was ready only to find that there was no order...I forgot to hit the final submit button. Y'all...you have no idea how many times I do that. The electricity bill, my car payment...whatever. It is those stupid little, "Are you sure you want to submit the submit button you just submitted twice?" YES!!! JUST DO W...

Brinner. It is not something that I am usually excited about doing, but every time it is requested, it conjures fond memories of a show my young little family would watch together, Scrubs. Every time I hear brinner, I am brought back to... What is brinner? Well in case you still don't understand, brinner is breakfast for dinner. That's right. My family loves brinner...my family loves breakfast, but sometimes it takes a little bit for me to be ready to cook anything early in the morning.
