Cooking Day 1: The Beginning & Farfalle Alfredo with Breaded Chicken

Today is Day 6 for our city's stay-at-home order. I am an Executive Assistant at a University. My son is a cook at a high-end restaurant in our town. He does not have any formal kitchen training, except for what he received from me growing up in our kitchens and working his way up in restaurant kitchens since he was 17.

He began his first job as a fry cook at Popeyes. He loved it, we loved it, until it interfered with school. He worked hard and brought his grades back up enough where we let him get another job. This time, as a dishwasher at the infamous Texas Roadhouse.

The first week was great, he came home smelling like steak all the time...until it got gross. It was too late though, he fell in love with the kitchen. This love of the kitchen got him through about three years there until he decided it was time to move up and learn more. He had almost no confidence in himself, but he auditioned and they hired him right away.

His first night was so great. He came back talking about how he was prepping fruit for desserts. I mean, it was so menial, but he was so happy and excited. He told how he was addressed as Chef...can you imagine how his heart swelled? He had done menial tasks before, but this was so different for him.

Anyway, long story short, that was about three years ago and I have barely seen him since...and he lives at home! Now, with the stay-at-home order, he is not working and home every day, every night. I don't know why it took so long for us to come up with this idea.

I am still working 8-5, from home. He is bored, he is creatively stuck. So we have decided to take turns cooking dinner through COVID-19. Tonight, we are doing it together. I said, "How about chicken Alfredo?" He said, "What if we put a Panko crust on the chicken instead of blackening it?"

We didn't think about the blog until halfway through the meal, but we will try to do better. But tonight's dinner is below. We will try to keep this up with our inspirations or stories for our upcoming meals.

    1. Jen, this is really one of my favorite ways to eat tomatoes. Just a little olive oil, salt and pepper (or any other seasoning you like) and broil til they blister. SO SWEET and yummy!
